1.Make sure all ingredients are at room temperature before combining, unless recipe says otherwise. 

2.Don't substitute reduced-fat margarine for full-fat because the increased water content will adversely affect the end results. 

3.For even baking, form cookies on the same sheet to a uniform size and thickness. Let sheet cool thoroughly before placing a second batch on it.
